Pasetti pecorino is a “must-see” which fully reflects the strong traditions of the Abruzzo region. In their cradle, these native grapes express themselves excellently. Today, this young 100% pecorino wine represents one-third of the total production.
How to serve it – It needs to rest at least 10 days after its arrive. It should be served at a temperature of 8 – 10 °C.
Gastronomic matching – Row fish, cold cuts, white lasagna, risotto, courtyard animals, medium-seasoned cheeses.

Production area
The vineyards extend in the area of Pescosansonesco at 550 m.a.s.l., and Capestrano at 450 m.a.s.l., in the core of Gran Sasso and Monti della Laga National Park.
Characteristics of the variety
The Pecorino is an Abruzzo native variety, rediscovered some years ago thanks to the recovering work of a few brave winegrowers. It prefers fertile soils with a good water availability. The wine is characterized by marked citrine notes and freshness, with proper body and gustatory persistence
Vineyard
100% Pecorino, density of 5200 plants/ha, 100 tons/ha yield, manual harvesting in boxes in the last decade of September.
Vinification
In White: soft pressing and subsequent static decantation. Fermentation in stainless steel vats at low temperature (14°-16°).
Ageing
2 months in stainless steel vats and 2 months in the bottle. It should be stored at 16°-18° and consumed preferably within 3 years from the harvest.
Sensory analysis
Crystal straw yellow wine. Nuances of yellow pulp fruit with citrus fruit notes. Freshness and sapidity are in perfect balance with its good body, long persistence and a pleasant velvety sensation.
