Sensory Analysis – Light bright pink. Fine and persistent perlage. It presents itself elegantly on the nose, with delicate almond and baking notes; on the palate it is full, dry and acidic. Salty finish.

Production area
The vineyards extend in the Municipality of Capestrano at an altitude of 480 meters above sea level within the National Park of Gran Sasso and Monti della Laga. The area is characterized by high temperature variations that preserve acidity and improve the synthesis of aromas. The soil, of pebbly-sandy matrix, is ideal for imparting savoriness to the wines.
Properties of the variety
Pinot Noir is a rather delicate grape variety, characterized by early maturation. It prefers limestone soils and climates that are not too warm, where it would mature too quickly. When vinified as a white wine, it is used as a base for the best classic method sparkling wines.
Vineyard
Chardonnay and Pinot Nero, Vintage, density of 5200 plants/ha, yield of 120 tons/ha, handpicked in crates towards the end of August.
Vinification
Washing and subsequent refrigeration of the grapes at 8°C. Soft pressing of whole clusters with selection of the flower must. Subsequent static settling. Fermentation in steel tanks with selected yeasts at 14 – 16 °C. Racking and subsequent refermentation using the classic method at 18°C. Disgorging.
Ageing
Long bottle aging on the lees. To be stored at 14 – 16 °C and preferably consumed within 24 months from disgorgement.
